1 tbsp. thai curry paste
1 tbsp. soy sauce or miso
1 tsp. fish sauce
1 tsp. sugar
1 tbsp. sake or mirin (optional)
1 tbsp. gochujang or sambal (optional)
1 tsp. oyster sauce (optional)
Mix all ingredients in warm oil until a homogenous paste is formed. Add onions, any vegetables, fish, meat or tofu. Serve as a quick stir-fry or let it stew for hours. Serve with rice.
Thai curry is a universal dish, largely independend of specific ingrediens or even spicings. Just add whatever you have and prepare it your preferred way. Well suited as daily cooking, simply add some fresh ingredients and a little spice every day!
Curry paste comes in a large varienty of flavours. Red paste is g great all-rounder, green is great with beef, yellow goes well with chicken – experiment and try them all!
